The humble vanilla slice has been loved in Australia for generations and while every family has their own version of the classic recipe, this is one you’ll want to share with your loved ones.
As well as being delicious, it’s one of the easiest recipes we’ve come across and uses just five ingredients. It doesn’t take much to whip up this creamy dish and, with hardly any ingredients, it definitely sticks to the budget. 1. Preheat oven to 210C. Line baking tray with baking paper. Line slice tin with baking paper. Score pastry sheets and bake for 10-15 minutes or until puffed and just golden. Remove from oven and place a tray on top of sheets to make flat. Cool.
2. Add milk, cream and pudding mix to bowl. Use electric mixer to beat until thick.
3. Gently cut one pastry sheet to fit base of slice tin. Place in tin. Pour custard mixture into slice tin and smooth out evenly with back of spoon. Cut second sheet of pastry and place gently on top. Press down slightly to secure.
4. Place in refrigerator to chill for about 3 hours. Sprinkle with sifted icing sugar. Slice into even squares. Serve.
