Simple yet delicious three-ingredient capsicum soup

Delicious soup for those chilly nights!

Now this is an ideal recipe for a busy weeknight dinner! Not only does it have just three ingredients (well, four if you’re counting the crusty bread to pop on top when you serve it) but it will be on the table, ready to be enjoyed, in under an hour. This delicious soup is full of goodness – both for your tastebuds and for your insides. It’s hard for anyone to not enjoy this flavoursome dish and you won’t believe how easy it is to cook!


  • 4 medium red capsicums, chopped
  • 400g can whole peeled tomatoes
  • 3 cups chicken liquid stock
  • Crusty bread, to serve


  1. Heat oil in large saucepan over medium heat. Add capsicum. Cook and stir for 5 minutes or until just softened. Add tomatoes and stock. Bring mixture to the boil Reduce heat to medium-low. Leave to simmer for 25 minutes or until capsicum is tender.
  2. Remove soup from heat. Place in processor once cooled. Process until smooth. Return to pan over medium-low heat. Cook and stir for 2 minutes or until completely heated through. Divide between serving bowls. Top with crusty bread. Serve.
