Super-easy banana and caramel muffins

These deliciously dense muffins might possibly be the tastiest and easiest sweet snacks you’ll ever try. With banana and caramel chips mixed together in the one dish, it’s hard not to fall in love with these treats. They’re definitely best served warm and fresh from the oven however, the addictive flavours will last in the freezer for up to two months. Give these a go as an afternoon tea snack or an after dinner sweet treat and while you’ll want to keep them all to yourself, your guests will go absolutely crazy for these muffins as well!


  • 1 cup self-raising flour
  • 3/4 cup plain flour
  • 1/4 cup caster sugar
  • 60g butter, melted, cooled
  • 1 cup milk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla essence
  • 1 cup mashed banana
  • 1/3 cup caramel chips


  1. Preheat oven to 190C. Line a 12 hole, 1/3 cup-capacity muffin pan with paper cases.
  2. Add all flours and sugar in a large bowl. Stir well. Make a well in centre. Pour butter, milk, egg and vanilla. Combine. Fold in banana and caramel chips. 
  3. Distribute batter evenly between prepared cases. Bake for 20 to 22 minutes or until just firm to touch. Stand in pan for 5 minutes to cool. Transfer to wire rack to cool completely. Serve.
