Delicious raspberry and white chocolate slice

When it comes to sweet treats, there may not be a more perfect pairing than raspberry and white chocolate. They have long been mixed together to create delicious desserts that have stood the test of time and this recipe is no different. These slices mix the light and fresh taste of the berries with the deliciously sweet flavours of the white chocolate. Made to be eaten with a cup of tea or coffee, why not make this your naughty snack of the day!


  • 375g pack ready-rolled shortcrust pastry
  • 500g mascarpone
  • 100g golden caster sugar
  • 100g ground almonds
  • 2 large eggs
  • 250g fresh raspberries
  • 100g white chocolate, roughly chopped


  1. Preheat oven to 160C. Roll out pastry on lightly floured surface. Line the base and sides of a 30cm x 20cm tin with the pastry. Place baking paper over the top. Top with baking weights. Bake for 10 minutes. Remove from oven. Remove baking paper and weights. Cook for another 5 minutes.
  2. Add mascarpone, sugar, almonds and eggs into a bowl. Whisk together until well blended. Fold in raspberries and chocolate.
  3. Pour mixture into prepared pastry. Baking for 2-25 mins or until just set. Turn off oven. Leave oven door open and let tray bake cool slowly. Once cooled, chill for 1 hour. Slice and serve.
