Delicious coconut and cinnamon bread

A classic, fruity flavoured afternoon tea loaf has been the go-to option for so long now, sometimes we forget that there are other flavours out there. This coconut version is definitely one to try. It’s super light on the stomach and isn’t as sweet as other flavours but rather more warm and comforting tasting thanks to the addition of cinnamon. This tasty mix is definitely best served fresh from the oven so a bit of butter will easily melt into the base. If you’re feeling a bit adventurous and still looking for that fruity taste however, try mixing in fresh apricots to complement the combination of different flavours. Enjoy!

Ingredients

  • 2 eggs
  • 300ml milk
  • 1 teaspoon vanilla extract
  • 375g (2 1/2 cups) plain flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 220g (1 cup) caster sugar
  • 150g shredded coconut
  • 75g unsalted butter, melted

Method

  1. Preheat oven to 180C. Grease a 21 x 10cm loaf pan and line with baking .
  2. Add eggs, milk and vanilla to a bowl. Lightly whisk to combine. Sift flour, baking powder and cinnamon into a separate, large bowl. Add sugar and coconut. Stir together until just combined. Make well in centre of dry ingredients. Gradually stir in wet ingredients until just combined.
  3. Add melted butter and stir until mixture is just smooth, without over-mixing. Spoon into prepared pan and bake for 1 hour or until skewer inserted into centre comes out clean. Leave to cool in pan for 5 minutes. Turn out onto wire rack to cool completely. Slice and serve.
