Dairy-free honey cake

A deliciously moist cake with plenty of spice.

This cake is one of those simple and delicious treats you’ll want to whip up time and time again. Not only is it dairy and egg-free, it’s also low in sugar thanks to the use of honey and applesauce to sweeten the mix. Most importantly of all, it tastes amazing! The subtle spice from the cinnamon, cardamom and tea really shines through and the coconut oil helps keep everything lovely and moist. Let it cool for about 20 minutes before slicing. Enjoy!

Ingredients

Dry

  • 1 1/4 cup + 2 tablespoon Plain flour
  • 1/2 teaspoon cardamom powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Wet

  • 1/2 cup honey
  • 1/2 cup sugar
  • 1/4 cup + 2 tablespoon applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil
  • 1/2 cup strong tea (try chai tea)

Method

1. Preheat oven to 160C. Mix the dry ingredients in a bowl. Whisk to combine.

2. Mix the wet ingredients in a separate bowl.

3. Add the wet ingredients to the dry ingredients and fold in gently. Do not over mix. Bake in the oven for 20 – 25 minutes. Do not over bake.
