Tasty curried beef and lentil casserole

If you’re looking for a quick, easy and protein-packed dinner that will have leave you feeling satisfied then this curried beef and lentil dish should definitely be top of your list. Not only is it great for supplementing your body’s iron requirements throughout the week but it also tastes absolutely delicious!

With just a handful of ingredients and a super simple method, this recipe is going to become one for the books. Pair it with a simple piece of toast, a few roast veggies or some creamy mashed potatoes and you’re good to go!

Ingredients

  • 2 teaspoons olive oil
  • 400g beef chuck steak
  • 1 brown onion, coarsely chopped
  • 1 carrot, peeled, coarsely chopped
  • 1 garlic clove, crushed
  • 2 teaspoons curry powder
  • 400g can diced tomatoes
  • 400g can lentils, rinsed, drained
  • 400g can chickpeas, rinsed, drained

Method

  1. Heat oil in medium heavy-based saucepan over high heat. Add beef and cook, stirring, for 5 mins or until browned all over.
  2. Add onion, carrot, garlic and curry powder. Cook, stirring, for 3 mins or until onion softens.
  3. Add tomato, lentils, chickpeas and 1 1/2 cups (375ml) water. Season. Bring to the boil. Reduce heat to low. Cover and simmer for 1 1/4 hours. Uncover and cook for a further 15 mins or until sauce thickens slightly and beef is tender. Serve.
