This tasty dish is an all-time favourite!

Quiche is mostly a super healthy breakfast or lunch option, however the one thing that makes it a little bit of a guilty pleasure is the pastry. Luckily, this low-carb, high-protein recipe removes that part completely. Rather than adding the unnecessary casing, this spinach quiche creates an equally tasty version that everyone will love.

It’s a great and super easy option for breakfast that will no doubt fill you up and give you enough energy to power through the day. The recipe is also super flexible so feel free to add in some meat like chopped ham or bacon or any additional veggies. Enjoy!


  • 1 cup chopped onion
  • 1 cup sliced fresh mushrooms
  • 1 tablespoon vegetable oil
  • 1 package frozen chopped spinach, thawed and well drained
  • 2/3 cup diced tomato
  • 5 large eggs
  • 3 cups shredded cheese
  • 1/8 teaspoon pepper


  1. Preheat oven to 180C. Grease a quiche dish. Heat oil in a large frying pan. Saute onion and mushrooms until tender. Add spinach and tomato. Cook and stir until excess moisture is evaporated. Remove from heat and cool slightly.
  2. Beat eggs in bowl. Add cheese to bowl and mix well. Stir in spinach mixture. Season with pepper. Stir well.
  3. Spread batter evenly into a prepared dish. Bake for 40-45 minutes or until a knife inserted in centre comes out clean.
