If you’re on the hunt for a light, easy and cheap lunch or dinner dish that is going to please anyone who tries it, then look no further. Tuna is a hit with almost everyone because it’s one of the cheapest ingredients, it’s easily accessible and it’s super versatile. So when you pair it up with everyones second favourite easy and cheap ingredient, lemon, you get the perfect dish.

These crumbed patties are perfect to enjoy either with a side of mash potato, in a burger bun or just on their own as a quick and healthy snack with a tasty dipping sauce. So next time you don’t want to stretch the budget, try these for a delicious filling feed!


  • 1 x 475g carton potato mash
  • 2 x 185g cans tuna in oil, drained, flaked
  • 2 green shallots, ends trimmed, thinly sliced
  • 1 tablespoon finely grated lemon rind
  • 2 tablespoons chopped fresh continental parsley
  • 1 egg yolk
  • 2 eggs, lightly whisked
  • 90g (1 cup) dried breadcrumbs
  • Vegetable oil, to shallow fry


  1. Add mash, tuna, shallots, lemon rind, parsley and egg yolk in a bowl. Stir to combine.
  2. Divide mixture into eight even portions. Mould each portion into a patty.
  3. Place egg in dish. Place the breadcrumbs on a plate. First, dip patties in egg, then in the breadcrumbs. Press down firmly to coat. Repeat with all patties. Place in the fridge to chill.
  4. Add enough oil to a frying pan to come 5mm up the side of the pan. Put pan over medium heat. Add patties. Cook each patty for 3 to 5 minutes each side or until golden. Carefully transfer to plate lined with paper towel. Serve.
