Creamy three-ingredient cauliflower soup

This super easy three-ingredient soup is one of the best recipes when it comes to cooking a hearty and filling dish that doesn’t have you hanging around in the kitchen for hours. After baking the cauliflower, all that’s needed is about 10 minutes of work before the dish is sitting on the table ready to be devoured. This is the perfect low-effort meal to whip up when you feel like something on the stomach and easy to make. Don’t forget to add some crusty bread on the side to make sure you soak up every last drop of this delicious dish!

Ingredients

  • 1 large head white cauliflower
  • 4 cups vegetable stock, cooled
  • 1/3 cup cream

Method

  1. Preheat oven to 200C. Season cauliflower and lightly spray with olive oil. Place on baking tray. Bake for about 30 minutes or until golden. Set aside to cool.
  2. Once cooled, slice cauliflower into halves. Remove florets. Reserve a few for later use.
  3. Add chopped cauliflower, stock and cream to a blender. Process until completely smooth.
  4. Pour into saucepan. Heat up on stove when ready to serve. Season well with salt and pepper. Top with remaining florets.
