Comforting creamy chicken soup

Feeling a bit under the weather or just need a general pick-me-up? There’s nothing more comforting than creamy chicken soup. While it might be made to heal your insides, this delicious flavour will excite your taste buds too. Don’t be afraid to add a good helping of veggies for more colour and crunch but, even without extra ingredients, this dish is guaranteed to become a family favourite! Don’t forget to add a side of crusty bread so you can add add more texture and so it can soak up every last drop of this flavourful soup. Enjoy!


  • 2 cups chicken style liquid stock
  • 3 (900g) chicken marylands, skin removed – or 4 drumsticks
  • 1 large brown onion, chopped
  • 2 celery stalks, chopped
  • 1 medium leek, trimmed, halved, washed, chopped
  • 50g butter
  • 1/3 cup plain flour
  • 1/2 cup pure cream
  • 1/4 cup finely chopped fresh flat-leaf parsley leaves


  1. Add 3 1/2 cups cold water, stock, chicken, onion, celery and leek to large saucepan over medium-high heat. Bring to the boil. Reduce heat to medium-low. Cover and simmer for 1 hour.
  2. Transfer chicken to bowl. Cool slightly. Remove and discard bones. Use fork to shred meat. Set aside.
  3. Strain stock mixture into large heatproof jug. Discard solids.
  4. Melt butter in pan over medium-high heat. Add flour. Cook, stirring, for 1 minute or until bubbling. Gradually stir in stock mixture and cream. Cover. Bring to the boil. Reduce heat to medium. Add chicken. Cook, stirring occasionally, for 15 minutes or until soup thickens slightly. Season with salt and pepper. Sprinkle with parsley. Serve.
