Comforting carrot and parsnip soup

This tasty dish is absolutely perfect for feeding to a hungry crowd for lunch or dinner. Not only is this smooth and creamy meal exploding with different and exciting flavours but it’s also packed full of vegetables to make the dish as nutritious as it is delicious. This incredible soup takes under an hour to whip up and uses minimal effort so it’s great for beginner cooks who want to test out their abilities and enjoy a delicious dish. Don’t forget to serve it up with a side of crusty bread to make sure you don’t miss a drop of this mouthwatering flavour!


  • 1 parsnip, washed, trimmed and halved lengthways
  • 1 kg carrots, washed, trimmed and halved lengthways
  • 2 teaspoons brown sugar
  • salt and cracked black pepper
  • 2 tablespoons olive oil
  • 4 cups (1 litre) chicken style liquid stock or vegetable liquid stock


  1. Preheat oven to 180C. Line a baking tray with non-stick baking paper. Place parsnip and carrot on tray. Sprinkle brown sugar, salt and pepper over the top and drizzle with the oil.
  2. Roast parsnip and carrot for 35 minutes or until softened and golden brown. Remove and leave to cool on tray for 10 minutes. Transfer to a blender or food processor and blend together until smooth. Add water if consistency is not smooth enough.
  3. Place puree in large saucepan over medium-low heat. Add stock and 2 cups of water. Bring to a high simmer. Cook for 5 minutes to heat through. Ladle into serving bowls. Season to taste. Serve.
