You can’t beat a hearty and healthy piping hot soup for a delicious lunch dish – and this recipe is super easy too. Not only is it a great way to sneak a whole bunch of vegetables into your diet, but it’s also incredibly creamy and tasty – ensuring even the fussiest of eaters will enjoy it.

With just a few simple ingredients, it’s really cheap to gather everything together to cook it up and while this gourmet soup might taste difficult to make, in reality it’s quite simple. You can try this with a classic side of crusty bread or simply served on it’s own as a great comfort food.

Ingredients

  • 2 teaspoons olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 broccoli heads, cut into florets, stems chopped
  • 1 Red Royale potato, peeled, chopped
  • 4 cups (1L) salt-reduced chicken or vegetable stock
  • 1 cup (120g) frozen peas
  • 1/2 cup (125ml) thickened cream

Method

  1. Heat oil in large saucepan over medium heat. Add onion. Cook and stir for 5 minutes or until onion is tender. Add garlic. Cook for around 30 seconds. Add broccoli stems, potato and stock to pan. Bring mixture to the boil. Cook while stirring occasionally, for 20 mins or until broccoli and potato are softened.
  2. Add broccoli florets and peas to pan. Bring to a simmer. Cook mixture for 3-5 mins or until the vegetables are bright green and softened. Remove from heat. Let cool slightly.
  3. Use hand-held stick blender to carefully blend soup until smooth. Add cream and blend well to combine. Season. Ladle between serving bowls. Serve.
