Cheesy mashed potato croquettes

Retro food and the classic dishes we used to serve at dinner parties in the 1970s have made a huge comeback in recent years and these delicious croquettes are an all-around favourite. The crispy, crunchy and cheesy bites are completely irresistible and make a great addition to the menu at this time of year when friends and family are gathering together to share a tipple and good food.

While they look quite fancy when served up to guests on a pretty tray with garnish, they’re incredibly easy to make and are bursting with flavour thanks to the addition of bacon and mozzarella. The recipe is also a great way to use up any leftover mashed potatoes. Serve with a side of sour cream or your favourite sauce and dig in!

Ingredients

  • 2 cups mashed potatoes
  • 1 egg, lightly beaten
  • 3/4 cup mozzarella cheese
  • 1/2 cup spring onions, chopped
  • 1/4 cup bacon, diced
  • 1/2 cup dry bread crumbs
  • Oil for frying

Method

  1. Place mashed potatoes in large bowl.
  2. Stir in egg, mozzarella, onion and bacon.
  3. Shape mixture into three centimetre balls, then roll in bread crumbs.
  4. Heat oil in frying pan over medium-high heat.
  5. Place potato balls in oil and fry, turning frequently, for three to five minutes (or, until crispy and golden).
  6. Remove with slotted spoon and place on paper towel to drain.
