Cheat’s spaghetti bolognese

As the nights start to get cooler, it’s important to work a few quick and easy comfort foods into your diet to fill you up and lift your mood. Spaghetti bolognese has always been a fantastic option for nights when you’re fresh out of new ideas but still want to serve something delicious and hearty for dinner. However, some versions of this traditional recipe can get quiet complicated so it’s always good to have a simple method in your back pocket for when you don’t have the time to whip up something difficult. The best part is, because this recipe is so easy you can always build on it by experimenting with ingredients and extra spices. Enjoy!


  • 2 tbsp olive oil
  • 400g beef mince
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 100g carrot, grated
  • 2 x 400g tin chopped tomatoes
  • 400ml stock (made from stock cube. Ideally beef, but any will do)
  • 400g dried spaghetti
  • Salt and pepper
  • Grated parmesan


  1. Heat 1 tablespoon of oil in large saucepan over medium heat. Add beef and pinch of salt and pepper. Increase heat to medium high. Cook mince until well browned. Transfer to bowl. Set aside.
  2. Heat 1 tablespoon of oil in same saucepan over medium heat. Add onions and pinch of salt. Fry for 5-6 minutes, or until softened. Add garlic and cook for 2 minutes. Add carrot to pan along with cooked mince and any extra juices from the bowl.
  3. Add tomatoes to pan. Stir well. Pour in stock. Bring to a simmer. Reduce temperature to simmer gently for 45 minutes, or until sauce is thickened. Season to taste.
  4. Cook spaghetti in boiling, salted water according to the packet instructions. Drain and add to pan with sauce. Mix well. Top with parmesan. Serve.
