Tasty broccoli and pea fritters

When it comes to simple, healthy and tasty dinners, it’s hard to go past these broccoli and pea fritters. They’re packed with tasty ingredients including broccoli, peas, chickpeas and fresh mint, which are combined in a lovely and light batter that fries up into the perfect crispy fritters. You can enjoy them as is, or topped with a creamy garlic dip and served with a light garden salad. This no-fuss meal works perfectly for lunch or dinner, so what are you waiting for? Dig in!

Ingredients

  • 200g broccoli, florets
  • 2 garlic cloves, peeled
  • 3 green shallots, chopped
  • 1/2 cup fresh mint leaves
  • 150g frozen peas, thawed
  • 200g can chickpeas, rinsed, drained
  • 200g can corn, rinsed, drained
  • 2 tbsp gluten-free cornflour
  • 2 eggs
  • 1 1/2 tbsp olive oil

Method

  1. Place the broccoli, garlic, shallot and mint in a food processor. 
  2. Process until finely chopped. Add peas, chickpeas and corn. Pulse until coarsely mashed. 
  3. Transfer the mixture to a bowl. Add the cornflour and eggs. 
  4. Season well. Use a spoon to stir until just combined. 
  5. Heat two tablespoons oil in a large non-stick frying pan over medium heat. 
  6. Add 1/4-cupfuls of batter and cook for 2-3 minutes each side. 
  7. Transfer to a plate lined with paper towel. 
  8. Repeat with remaining oil and batter.
