Bite-sized salted caramel fudge

We all know what it’s like to be craving sweet and salty foods, but this salted caramel fudge combines them together and it’s the answer to your prayers.

The delicious and dense treats are so incredibly tasty and are also conveniently sized to make sure you don’t make yourself sick. If you’re not the best at self-control when it comes to delectable treats like these, then making them into small serving sizes is the perfect answer. Just have one or two to satisfy your sweet tooth after dinner – the perfect end to a delicious meal.


  • 2 1/3 cups (500g) caster sugar
  • 2 cups (500ml) thickened cream
  • 1/2 cup (125ml) liquid glucose
  • 60g butter, chopped
  • 1 1/2 teaspoons sea salt flakes
  • Sea salt flakes, to sprinkle


  1. Lightly grease a 20cm square cake pan. Line sides and base with baking paper. In a medium saucepan over low heat, add sugar, cream, glucose, butter and salt. Cook and constantly stir for 5 minutes or until the sugar has completely dissolved. Increase heat to high and bring to the boil. Cook and stir for 10 minutes. Use thermometer to ensure mixture is at 118C.
  2. Pour mixture into prepared pan and smooth over top. Sprinkle with extra salt. Set aside for 1 hour to firm.
  3. Turn caramel onto clean and flat work surface. Use a sharp knife to slice into 2cm squares. Top each square with extra sea salt flakes. Serve.
