Flavoursome banana and caramel muffins

Having a bunch of overripe bananas lying around your kitchen is the perfect excuse to whip up some delicious muffins. With banana and caramel chips mixed together in the one dish, it’s hard not to fall in love with these treats. The tasty cakes are also super easy to bake and they make a great treat for the whole family. They’re perfect for afternoon tea, dessert or even breakfast on the go!

Ingredients

  • 1 cup self-raising flour
  • 3/4 cup plain flour
  • 1/4 cup caster sugar
  • 60g butter, melted, cooled
  • 1 cup milk
  • 1 egg, lightly beaten
  • 1 tsp vanilla essence
  • 1 cup mashed banana
  • 1/3 cup caramel bits

Method

  1. Preheat oven to 190C. Line a 12 hole, 1/3 cup-capacity muffin pan with paper cases.
  2. Combine flours and sugar in a large bowl. Make a well in the centre.
  3. Add butter, milk, egg and vanilla. Mix until just combined. Fold in banana and caramel bits.
  4. Spoon mixture evenly between paper cases. Bake for 20 to 22 minutes.
