Banana, blueberry and yoghurt mini-muffins

These tasty bite-sized treats are ideal for packing lunches, going to picnics, enjoying as a treat alongside your afternoon tea cuppa, or having for a light breakfast. Not only are they super versatile but they’re a great healthy option that still taste deliciously good. This particular recipe has absolutely no added sugar and relies on sweetener  and the juicy fruit to satisfy your sweet tooth. It’s also an incredibly quick and easy recipe that takes under 20 minutes to prepare. So if you’re short on time but don’t want to turn to any unhealthy store bought treats, bake these in bulk and snack on them without feeling guilty!


  • 1 cup self-raising flour
  • 1/2 cup wholemeal self-raising flour
  • 1/2 cup Stevia Sweet granules
  • 1 cup reduced-fat plain Greek-style yoghurt
  • 1/2 cup mashed banana (see note)
  • 1/4 cup extra-light olive oil
  • 1 egg
  • 1 cup frozen blueberries


  1. Preheat oven to 190C. Grease 3 x 12-hole mini muffin pans.
  2. Add flours and stevia to a bowl. Stir to combine. In a separate jug, whisk together yoghurt, banana, oil and egg. Add wet ingredients to flour mixture. Stir until just combined. Fold through blueberries. Spoon into prepared pan holes.
  3. Bake for 12 minutes or until lightly golden and tops spring back when lightly pressed. Leave to cool in pan for 5 minutes. Transfer to a wire rack to cool completely. Serve.
