Cheesy bacon and zucchini slice

This tasty bacon and zucchini slice is super easy to make and not too bad on the health front either! While this recipe doesn’t call for any extra ingredients, feel free to add in grated carrots or even eggplant to mix up the flavour. Not to mention it only takes 15 minutes prep time before it can be left to cook in the oven. The best part about this slice is you can enjoy it fresh or you can pop it in an airtight container and freeze it for up to two months to enjoy later. 


  • 1/2 cup extra virgin olive oil
  • 1 brown onion, finely chopped
  • 4 rashers middle bacon, trimmed, chopped
  • 1 large head broccoli, cut into florets
  • 2 garlic gloves, crushed
  • 1/2 cup fresh basil leaves, torn
  • 3 zucchini, grated
  • 2 cups grated tasty cheese
  • 1 1/2 cups self-raising flour
  • 8 eggs
  • 1/2 cup milk
  • 100g feta, crumbled


  1. Preheat oven to 180C. Grease a 5.5cm-deep, 20cm x 26cm (base), 25.5cm x 32cm (top) roasting pan. 
  2. Line base and sides with baking paper, extending paper 2cm above edges of pan. 
  3. Heat two tablespoons oil in large frying pan over medium-high heat. 
  4. Add onion and bacon. Cook, stirring, for 5 minutes. 
  5. Add broccoli. Cook, stirring, for 2 minutes. 
  6. Add garlic. Cook, stirring, for 1 minute.
  7. Remove from heat. Set aside to cool. 
  8. Transfer bacon mixture to large bowl. 
  9. Add basil, zucchini, 1 1/2 cups tasty cheese and flour. Mix well to combine. 
  10. Whisk eggs, remaining oil and milk in a bowl. Add vegetable to mixture. Mix well to combine.
  11. Season with salt and pepper. Stir in feta. Pour mixture into prepared pan.
  12. Sprinkle with remaining cheese. Bake for 40 minutes.
