Scrumptious apple and apricot loaf

If you’re looking for a delicious and easy treat to whip up, you’ve found a winner! This apple and apricot loaf is super simple to make with everything thrown into one bowl and mixed together before it’s poured into the tin and ready for baking

This loaf takes about an hour to cook, but if you’re not sure if it’s done insert a skewer into the loaf and if it comes out clean, it’s good to serve!

You can make this up for special events or just for yourself as a delicious treat to have alongside your cuppa anytime of the day.


  • 1/2 x 825g can apricot halves in fruit juice
  • 2 x 120g tubs apple puree
  • 1/3 cup brown sugar
  • 2 eggs, lightly beaten
  • 1/4 cup buttermilk
  • 2 tbsp olive oil
  • 2 tsp finely grated lemon rind
  • 1 1/2 cups plain flour
  • 2/3 cup wholemeal self-raising flour
  • 1/2 tsp bicarbonate of soda


  1. Preheat oven to 180C. 
  2. Grease a 7cm-deep, 8cm x 19cm loaf pan. Line with baking paper, allowing 2cm overhang.
  3. Drain apricots. Place on a plate lined with paper towel. Roughly chop. 
  4. Combine apple puree, sugar, eggs, buttermilk, oil and lemon rind in a jug. 
  5. Sift flours and bicarbonate of soda into a bowl.
  6. Add puree mixture. Stir until just combined.
  7. Fold in apricot. Spoon mixture into prepared pan. 
  8. Bake for 1 hour and 10 minutes.
