Classic carrot cake with cream cheese icing

This mouthwatering cake has stayed a family favourite for years and for good reason. Whether it’s the deliciously moist base or the creamy icing, this tasty recipe will have everyone asking you for the recipe.

You can serve it up as a satisfying dessert treat or to go alongside a hot cuppa in the afternoon as this delicious carrot cake is the perfect fit for every occasion! Enjoy!

Ingredients

  • 300g carrots, peeled and grated on a box grater
  • 250g walnuts, roughly chopped
  • 2 free range eggs
  • 1 cup raw sugar
  • 3/4 cup canola oil
  • 1 teaspoon vanilla essence
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup plain flour
  • 1 teaspoon baking powder
    Icing
  • 1 cup icing sugar
  • 100g cream cheese, softened
  • 45g unsalted butter, softened
  • 1 teaspoon lemon juice
  • 1 lemon, zest, finely grated

Method

  1. Preheat oven to 180C and line 24x12cm loaf tin with baking paper. Combine eggs, sugar, oil, and vanilla in large mixing bowl and whisk to blend.
  2. Mix cinnamon, salt, flour and baking powder in separate large mixing bowl, then sift dry ingredients into the egg mixture and mix to blend. Add carrots and walnuts and mix until just combined.
  3. Pour batter into prepared loaf tin and bake for 1 1/4 hours or until skewer inserted into loaf comes out clean. Remove cake from oven and cool on wire rack.
  4. While cake is cooling, place all ingredients for icing into food processor and mix well until creamy, reserve.
  5. Once carrot cake has cooled completely, carefully remove from loaf tin and peel away baking paper. Spread icing generously over top of carrot cake, slice and serve.
