Classic apricot and almond slice

There are some ingredients that just work perfectly together every time and almonds and apricots are two of them. Whether you’re making something savoury or sweet, it’s hard to go past juicy apricots and that sweet crunch of almonds. This recipe makes the most of the two ingredients to create a moorish slice that’s bound to get gobbled up quick smart. 

The base uses almond meal to create a super moist and spongy layer, while the top is decorated with plenty of juicy apricots and a delicious sticky apricot glaze that will leave you licking your fingers. 

It’s super easy to make with only 10 minutes of preparation and is baked in under 20 minutes. Store in an air-tight container in the fridge and serve with a nice cuppa!

Ingredients

  • 125g butter, softened
  • 1/3 cup caster sugar
  • 2 eggs
  • 1 1/4 cups almond meal (ground almonds)
  • 2 tablespoons plain flour, sifted
  • 400g can apricot halves in natural juice, drained
  • 1 tablespoon apricot jam

Method

  1. Preheat oven to 180C. Line a 3cm deep, 17cm x 28cm pan with baking paper. 
  2. In a bowl, combine butter, sugar and eggs. Beat with an electric mixture until well combined. Add in almond meal and flour. Stir well until combined.
  3. Pour the almond mixture into the prepared pan. Lay apricots on top the mixture with the cut side up. Press slightly so they are secure. Place in oven and bake for 18-20 minutes. Insert skewer and remove, if it comes out clean the slice is ready.
  4. Pour jam into a microwave safe bowl. Place in microwave, uncovered on high for 30 seconds until warm. Drizzle or brush warm jam over the top of the slice. Allow to cool in pan. Cut into even squares. Serve.
